Summer has ended and just like that the days are drawing in. It’s also that time of year when a certain spice seems to be anywhere and everywhere. So let’s jump on that band-wagon and make some cinnamon spiced French toast. Eat it for breakfast, as a dessert or even a midday snack!
Ingredients
For the caramelised cinnamon apples
2 apples
3 tbsp brown sugar
2 tbsp butter
1 tsp pumpkin pie spice or mixed spice or cinnamon powder
For the French Toast
Sliced brioche loaf, 2 slices per serving
2-3 eggs is enough for 2 servings
Butter for frying
Squirty/whipped cream to decorate

Peel and chop the apples, put in a saucepan and add the pumpkin pie/cinnamon spice, the sugar, and the butter
Cook over a medium heat for 8-10 minutes. The apple will still retain a crunch, you can cook for longer if you want softer apples
Beat the eggs, add some pumpkin pie or cinnamon spice if you wish
Dunk the brioche in to the egg wash. Make sure it is well soaked in, on both sides of the bread.
Melt a knob of butter in a hot skillet or frying pan
Over a medium heat, cook the brioche for 3-4 minutes on each side
Plate the brioche, add the caramelised apples on top, dust with sone confectioners sugar and some whipped cream
